CRUST –
2 cups of sunflower seed 1 cup raisins – soaked (1/2 hr. in cold water - drain) ½ apple
Blend ingredients in a food processor and form into a pie pan.
FILLING –
7 apples –(granny smiths are very good) 8 pitted medjool dates – soaked and drained ½ cup currants (or raisins)
½ lemon, juiced 1 teas. cinnamon
In a food processor, blend 2 apples with dates until smooth Pour into a bowl and set aside In food processor, pulse chop 4 apples into tiny pieces. Add to bowl. To the date mixture, add cinnamon, lemon and currants and mix well. Pour the filling into the crust and let sit at least one hour.
