Angel Hair Pasta and Marinara Sauce

Alissa highly recommends using a Saladacco for the most beautiful, delicate and delectable Angel Hair. This is a fast and easy recipe. People are always surprised at how good this mock 'pasta' is!

Angel Hair Pasta:

3-4 zucchini

Marinara Sauce:

2 1/2 cups tomatoes

12 sundried tomatoes, soaked

3 dates, pitted and soaked

1/4 cup olive oil

4 cloves garlic

2 TBSP parsley

1 teas. sea salt

1/8 teas. cayenne

For Angel Hair:

Spiralize the zucchini in the Saladacco. Pour angel hair zucchini pasta into a large bowl.

For Marinara Sauce:

Place all of the Marinara ingredients into a food processor and blend until smooth. Pour over angel hair pasta and serve.

Suggestions:  Try topping with capers and yello tomatoes for a beautiful presentation.
