| Winter Squash Soup |

From RAWSOME by Brigette Mars (a great book)! Raw winter squash may sound like a tough chew, but when it is pureed, it becomes qite tender and flavorful. Yield: 4 servings
1 acorn squash or butternut squash, peeled, seeded and chopped 1/2 cup almond butter 1 TBSP. curry powder (recipe to follow) or curry powder of your choice 1/2 teas. nutmeg 4 cups water 1/2 inch ginger root 1/2 teas. celtic sea salt Combine all ingredients in a blender and blend thoroughly.
Note from Beth- (Everyone loved this soup! another great recipe that doesn't see 'raw'. I even let it warm up in the Vita-mix blender so I was able to serve it as a warmed soup. I used a small butternut squash, it needed a bit more sea salt, I used a bit less curry - I suggest to taste. I am very interested to try Brigitte Mars curry next time - recipe below).
Curry Powder This blend offers the traditional, warming flavors of India without the necessity of cooking. 1/2 teas. mustard seeds 2 TBSP. cumin seeds 1 teas. coriander seeds 1/4 teas. cayenne powder 1/2 teas. tumeric 1/2 teas. ginger powder Combine all ingredients and mix well. use as needed.
